If you’re looking for a quick gluten free treat, try these gluten free peanut butter cookies. Even if you don’t have a lot of baking experience, this recipe is totally accessible. With just four ingredients, they couldn’t be easier to make.

The simplicity and quality of the ingredients that you use will make for a better cookie. So, use good peanut butter. I’m talking about real peanut butter. Like, just peanuts, and that’s it. No hydrogenated oils, no sugar, no other fillers.

  • 1 cup organic peanut butter (the better the peanut butter, the better the cookies)
  • 1 cup coconut sugar
  • 1 teaspoon alcohol-free, gluten free vanilla extract
  • 1 large, cage-free egg


  • Preheat oven to 350 degrees
  • Combine all ingredients in a large bowl and mix until blended.
  • For each cookie, scoop 1 tablespoon of dough on un-greased cookie sheet and flatten with fork, making crosshatch marks
  • Option: sprinkle course sea salt in the middle of flattened cookie.
  • Place 1 inch apart on cookie sheet
  • Bake 10 minutes until edges are lightly browned.
  • Transfer to wire cooling rack and let cool for 15-20 minutes.
